The Ellington

A good start

The Ellington Jazz Club is arguably the best thing to happen to Perth since Daylight Savings reared its delightful head.

Those in the know will tell you that Perth is no slouch when it comes to the jazz scene. Perth has one of the most respected jazz programs in the country at WAAPA, which draws students from across Australia and indeed the world. We also have local artists like Troy Roberts, Jamie Oehlers, Ali Bodycoat, Russell Holmes, Daniel Susnjar, and of course Graham Wood, who rate up there as some of the best in their given fields.

It might then come as bit of a surprise that until recently Perth had not one club dedicated specifically to Jazz. Which is why there’s been such a ground swell of appreciation that Bernard Kong and Graham Wood have finally gotten The Ellington out of their heads and into reality. Not that it was easy mind you. The guys fought long and hard to be able to open the club, obtaining the first new liquor license in Northbridge in 8 years… incidentally which was finalised literally half an hour before the launch night.

Now I am certainly no jazz expert. In fact if it hadn’t been for my good friend Alex Millier inviting me along on a number of occasions I could very well have completely missed the point. Fortunately he persevered though, because it doesn’t take long before the intimate ensembles bring you in. The bass, the piano, the drums, the sax, the trumpet. All melding into pieces both abstract and harmonious. There’s something distant yet inviting about jazz, there’s a certain uniqueness about how each performer approaches a piece, which means there’s always something different to appreciate. And with a line up of fantastic local and international acts performing every night of the week, there’s a real sense of community happening around the club.

It also doesn’t hurt that The Ellington is a beautiful space. Low slung lighting, a big brass polished bar, separate lounge with a live feed from the stage upstairs (for those that like to talk during a performance), a solid wine list and some very generous serves of food. They’ve also created a very savvy website and online identity. Reaching fans and locals through facebook and twitter to great effect. Add that to the fact that it’s walking distance from my house and the door staff are lovely, and you can see why I love it so much :)

Jessie’s Curry Kitchen

Satisfaction

Finally back to the business of eating in Perth. I have long been missing the love of a good honest curry. Since the fateful closing of Suraj last year, there’s been a curry shaped void in my life that no amount of franchised Indian restaurants could fill.

Enter the charming Jessie and her curry kitchen.

Situated in a barely recognisable corner of Inglewood on the Beaufort St strip that holds so much potential for both greatness and disaster for potential dinner goers, you probably wouldn’t know it was there. If you did happen to walk past it, you’d more than likely assume it was just a dull little suburban Indian takeaway store and continue on your way to get a dodgy kebab… but then you’d be wrong.

What Jessie’s Curry Kitchen lacks in style, it makes up for abundantly in substance. Jessie works the kitchen, and her husband Jeya works the floor. Everything is made from scratch in the kitchen and the curries have a special quality to them that can only be construed as “love”.

The menu is a mixture of Indian and Malaysian dishes. There’s dosai, chapati, roti paratha, and selection of basic curries described succinctly as “chicken butter curry”, “chicken curry”, “fish curry”, “lamb curry”. No need for superfluous explanations or derivations as the flavours stand for themselves. The fish curry we had consisted of mackeral and had a texture so meaty I could have sworn it was chicken if I closed my eyes. I’m not sure if that’s a great compliment but for something so unassuming to completely surprise me is a rare and special thing. The lamb curry brims with clove and star anise, but doesn’t attack the senses. In fact all the dishes are quite reserved in the Johnny Cash (Ring of fire) sense.

Being from Sri Lanka originally before moving to Malaysia, there is also the added bonus of String Hoppers served up on weekends. They’re little bundles of rice noodles woven together into flat circles, and make a fantastic way to mop up dahl and curry.

On my most recent visit to Jessies with my dining entourage the meal started off with samosas, then moved on to every different type of curry, dahl, chicken biryani, hoppers, and roti. There was 6 of us, and I think the total bill came to around $114. Which was plainly ridiculous given the amount of gorging we’d all just done. Add to the fact that I don’t think Jeya charges anything for corkage, so the 3 or 4 bottles of wine consumed over the course of an hour or two were well and truly worth it. On a side note, I’m still to find a great wine to pair with curry, although a glass of Charles Melton “Rose of Virginia” donated by Mr Wino-sapien & family was perhaps a better choice than my Chalk Hill Barbera, which on it’s own is quite stunning, but with curry just seems to confuse things.

All romanticism aside, the place is small, pokey, hard to find if you aren’t looking, and has about as much atmosphere as a dentists waiting room, but once the food arrives it all just makes sense. Each time I’ve been there I’ve had strange moments where I catch the eyes of other diners and we share a look that somehow indicates we’re in the know. It’s a nod of the head and a sly smile (which could just indicate I’m about to get lucky) that says somehow we’re onto something here that no one else recognises, somehow we’ve come to find something quite special. And I completely agree.

Masterchef Australia : Salmorejo with WA Marron & baby herbs

I came, I saw, I did not conquer.

The wiley among you would have guessed that my last post was in regards to Masterchef Australia auditions. Channel 10′s new big reality TV show for the year and the single train of though that has been occupying my mind for the past few weeks now.

I applied for the show before Christmas and then was pleasantly surprised to hear that I’d got an audition. The details for the audition were that we had to bring along one dish that would impress the judges. It should best be served cold, as there were no facilities to heat things up before they were tasted, and it should showcase your cooking ability and knowledge of flavours.

So being the resourceful food blogger that I am, I started scouring the internet and coming up with as many ideas as possible for a dish that would be seasonal, local, interesting but simple, and ultimately delicious.

With my trusty group of taste testers in tow I toured through the culinary landscapes. Starting off along the lines of a roast beetroot salad with goats curd, rocket, caramelised walnuts and orange, then went towards a roast pumpkin salad with blue cheese, toasted pine nuts and baby spinach, then ventured towards carpaccio of beef, tuna tataki, ceviche of king fish, gazpacho with morton bay bug tails. My taste buds then went a little sweet and I experimented with panna cotta, with frangelico and lime.

I took into account a lot of the great ideas put forward by all you lovely contributors and then a week before the audition I had an almighty cook-athon. Raiding the markets for the freshest, most delicious looking produce I could, then spending all afternoon prepping up all the potential dishes.

I called the taste testers over for a final opinion on the direction to go in. It was a one of the last dishes however, that caught their attention. Kam had casually dropped the idea of salmorejo into the comments, and so while prepping up the gazpacho, I left some tomato aside to make that as well. It was an instant hit and my direction was set.

Salmorejo is basically a cold Spanish soup made with tomatoes, stale bread that’s soaked in water, garlic, olive oil, and sherry vinegar. The hardest part about the dish is pronouncing it properly (sal-mor-echo), the rest is dead simple.

Pinchey Baby Herbs

Salmorejo comes from Cordova in Spain, and there it’s generally served with boiled eggs and jamon. I decided to serve mine with some local marron. Thinking the sweetness and lightness would be a great addition to the flavours in the soup, and getting a great suggestion from Deb about using baby herbs to give the dish some lift, without overpowering the flavour of the marron, as the chiffonaded basil I was using to garnish could be a little too much.

Once the main ingredients were set I diligently set about perfecting it. Trying as many different types of tomatoes as I could get my hands on, eating copious amounts of herbs at my local garden centre, and sourcing the freshest marron I could find. Fortunately Dad came to the rescue on that one, letting me know about a marron farm just outside of Corrigin. He rang up and they went out to the dams and fished some out just for me, then he drove them up to Perth in a box for me, well and truly alive and kicking (and ready to sever any fingers inadvertently left too close to the pinchey end).

The ingredients were thus finalised, and the night before the audition I sat up til 1am making the final batch of salmorejo and cooking the marron, ready for the 7:30am (!!) start time. How exactly I made it to the audition on time and awake I have no idea. But everything came together pretty smoothly.

Of course the auditions didn’t start at 7:30am. We instead sat in line for a good couple of hours while the camera guys and producers got little grabs of people looking excited and panned up and down the ever growing queue of people unnecessarily standing outside the building in the growing heat.

New queue buddies Manda, Tash, John, and I chatted about what we were all doing there in the first place, talked food, reality tv, and mused that we’d probably have the worlds best picnic with all the great food in everyones collective eskies at the moment.

So finally we get inside, sign our lives over to Masterchef and head into a little room to be briefed on the process. I’m not entirely sure what I signed when I put my signature to the release form, so I won’t give away any inside secrets about the show (not that I know any), but suffice to say it should be great to watch.

After our initial briefing we were split up into groups, and headed into our first audition session. About 10 people per group all went into a smaller room with a group of producers and assembled their dishes on a table up the front. Then two at a time talked about who they were and why they made the dish they made, and tasted the other persons dish and gave a little feedback on it.

I have to say all the dishes looked excellent, and all the ones I tried after the session tasted great. There was a terrine of chicken, lobster, and scallop, some vietnamese rolls with marron, a japanese tofu custard, a smoked salmon stack, a nectarine and pomegranate salad with lamb, a mango pudding with layers of panna cotta and jelly, a flourless chocolate liqueur cake with a berry sauce, scotch eggs with home made chutney, a layered salmon tartare, and a number of other different and wonderful dishes.

My salmorejo was very well received by everyone who tried it though. I was really happy with how the flavours came together and it looked great on the plate. When I heard my name called out for the second interview I was super happy. Those who made it through gathered anxiously outside, and those who didn’t were bid a fond farewell. It was surprising the amount of camaraderie generated in such a small time…but I guess that’s what being part of a shared experience can do to you.

Then on to my second interview with some other producers. I took my second plate of the soup and marron in and placed it delicately on the table in front of them, only to have them mostly ignore it and get straight to the nitty gritty of why I deserved to be on the show. I did my best to justify just how keen I was and made sure to emphasise keywords like passion, dedication, commitment, and honesty… a motivation speaker would have been so proud of me.

Then, when I thought it was all over, I had another chat with yet another producer. This time the lovely Keily, who wanted to know all about where I came from and what I liked, and if I were a food, what food would I be. It was all quite comfortable and positive when I left it was with a fairly strong idea that I’d be getting a call back for the next round of auditions, where I’d have to prepare a dish and present it in front of the judges for real.

So when the call came through at 8pm that night saying sorry, you didn’t make it through, I will admit, I was a little disappointed. Ok, very disappointed. But what can you do really. It’s TV, they have a specific group of people they are looking for and I guess I didn’t fit into whatever that was. If my dish hadn’t of been so well liked I think I’d be more upset, but as it stands I did everything I wanted and said everything I felt I needed to in the auditions to represent who I am.

Pretty much anyone who knows me will know just how competitive I am, but at the same time I won’t get hung up on things I have no control over. Plus as much as I’d like to hate everyone else who did get through to round 2, everyone I met was really nice and I have nothing but good things to say about the whole audition process.

So to all the lovely people I met over the course of the day (Tash, Manda, John, Rob, Charles, Antoneo, Patrice, Pete) I wish you well and look forward to seeing just who does go through to be the first Australian Masterchef.

And now… how about the recipe for my dish.

Salmorejo with West Australian Marron and baby herbs

You will need

  • Roughly 500g of tomatoes – the reddest ripest you can find, I tried about 4 different types
    and eventually settled on baby roma tomatoes which were plump and red and super sweet
  • 200g stale bread – I used a loaf of sourdough that was left out for a few days, but really any kind of bread would be fine, just not multigrain.
  • 3 or 4 cloves of garlic – vary this depending on how strong you want the garlic to come through
  • 2-3 tablespoons sherry vinegar
  • 100 ml of good olive oil
  • salt and pepper to season to taste

How I made mine

Depending on your tomatoes you may want to peel and core them before you start. I was using baby tomatoes and it wasn’t really an option, so I instead blended whole in a food processor and then strained them through a sieve to get rid of the skin and seeds. If you however, have a thing for peeling tomatoes (or you’re some kind of sadist) then you’ll get a great result that way too.

So blend the tomatoes with the garlic cloves, soak the bread in water til it’s soggy, and then squeeze the excess water out. What you’re basically making is a tomato emulsion, and the bread is here to stabilise and thicken it, and give it a nicer consistency.

While the food processor is still going, add the bread bit by bit until it’s all smoothly blended. It should be somewhat thick at this stage. Check the flavour and consistency and then add your sherry vinegar to taste, and gradually blend in the olive oil until you’ve got the consistency and flavour you like.

This soup is a real vehicle for the produce. So the better the tomatoes and olive oil you use, the better it’s going to taste. Once all of that is blended through, add salt and pepper and perhaps more sherry vinegar to taste, and more bread if you need to change the consistency.

Then either into the fridge for a while to chill it right down, or get a bit tricky a blend 3 or 4 ice cubes into the mixture for a quick cool down. I think it tastes better the colder it is, especially on baking hot Australian summer days.

The marron I simply cooked whole in salted water (after putting them into the freezer for 15 minutes to put them to sleep, and pushing a knive down through their heads between their eyes for a quick, tho still traumatic enough, death).

My final dish is then just arranging the soup on the bottom, a small mound of chopped and lightly seasoned marron into the middle of the dish, and a delicate topping of baby herbs on top. I ended up using baby basil, purple basil, asian parsley, and coriander. An elegant swirl of olive oil and the dish is ready to serve.

I recommend making a large bowl of it and watching Master Chef while bitching and moaning to your friends about what might have been :)

Slow Food: Oysters and Sparkling Wine

If ever you needed an event to tell you how great an organisation Slow Food is, this was it. Slow Food Perth recently hosted a fantastic event featuring freshly schucked oysters courtesy of the oyster man himself Jerry Fraser, paired with two stunning local sparkling wines, The Sparkplug Riesling from Oranje Tractor and Cosham Method Champenoise Pinot Noir Brut.

There’s something about the combination of oysters and sparkling wine that just works. The fresh zing of the wines, and the soft effervescent bubbles are a great counter point to the lush creaminess and briney essence of the sea of the oysters.

Along with a bit of a chat about the wines, Jerry gave us a breakdown on why you should never order pre-schucked oysters, and how best to appreciate them. Cooking is definitely out… Kilpatrick sympathisers should stick to cheese on toast as far as Jerry is concerned, and to fully appreciate the flavour they should first be swirled around your palate and then pushed to the roof of your mouth, much like a good wine might be. The difference in flavour when you do it this way is remarkable. The creaminess coats your mouth each time and lingers long after, til the wine works it magic.

Oyster virgin Jon came along and was hooked after the first one. Deciding eventually that a squeeze of lemon juice was the perfect accompany for him, to which I’m inclined to agree. A zest edge to the oysters creamy salt. We ate and drank our fill for as long as we could keep it together, before going out to continue the festivities.

Now having acquired an oyster knife and with Jerry on speed dial, I know how I’ll be seeing the New Year in. For a bit of help as to how the man himself schucks, check out the pictorial below.

Menu For Hope

Menu for Hope is an annual fundraising campaign hosted by well known food blogger Pim of Chez Pim and a revolving group of food bloggers around the world. Five years ago, the devastating tsunami in Southeast Asia inspired Pim to find a way to help, and the very first Menu for Hope was born. The campaign has since become a yearly affair, raising funds to support worthy causes worldwide. In 2007, Menu for Hope raised nearly $100K to help the UN World Food Programme feed the hungry.

I’ve always been a bit blasé about getting involved in causes. I like the idea of helping, but I’m generally happy for someone else to do it. Of course, that’s entirely the wrong attitude to have. For anything to get changed and make a difference, it takes the efforts of lots of people. So this year I’ve decided to get involved and offer a prize, and am pleased to announce Fiori Coffee have kindly donated a great prize, consisting of a barista training course and a gourmet coffee hamper !

2009 WA Latte Art and Coffee Cupping Competition

We had another great day at the Latte Art championships and the Cupping Competition last Sunday. I bravely stood up to the plate again and sacrificed my tastebuds to the cause of coffee to judge the latte art competition in the morning, because as we all (should) know, latte art is much more than just drawing hearts and flowers on top of coffee. The milk temperature and texture and the way it combines with the espresso is paramount to getting a good score. So no matter how lovely your patterns are, if your coffee tastes like microwaved nescafe, you will lose.

Fortunately the competitors on Sunday were a much classier lot than that, and after some stirling efforts from many competitors, the winner once again was Production Supervisor and latte artiste extraordinaire, Kim Godleman of 5 Senses.

Sadly I was judging the whole time of the comp, and with no minions to run around taking photos for me, I didn’t get many shots of the actual competitors during the day. The 5 Senses team did get a few shots though, that you can check out here.

Next up was the cupping competition, and true to form, I had not practiced once. Still, my steely nerves and trust in my palate was strong. I managed to get a break for lunch in between the latte art and the cupping, so I primed the tastebuds with a potato and ham calzone and a lemon lime and bitters. A lunch of taste champions no doubt. A few swirls of mineral water just to round out the bitters and we were good to go.

What is cupping you say ?
Cupping is the traditional method for breaking down the flavour profiles of brewed coffee. You roast a bunch of coffee to a certain level (generally lighter than for espresso), grind it to a specific courseness, and then let it steep in hot water (not boiling) for a set period of time. Then breaking through the crust of grinds on the top and inhaling deeply the aromas of the brew, and drawing out as much detail as you can about the nose, before slurping it as you would if you were tasting wine. Aerating the coffee across your palate and assessing the acidity, body, and length of finish etc.

The cupping competition is designed to be a high speed spectacle that mirrors this tradition. Each competitor is given 8 sets of 3 cups. 2 of the cups in each set are the same coffee, and one is different. The point then is to guess the odd one out, in as fast a time as possible.

The winner of the world cupping championships last year scored 8 out of 8 correct in less than 1 1/2 minutes. That’s 24 tastes of coffee in under 90 seconds… and 100% accuracy on what he was tasting.
Whilst I doubt I’ll ever be in that league, I’ll explain the method I use for this competition (If you can call it a method).

How I do it
Basically I taste the first cup in a set, slurp it across my palate and look for one single defining character of that coffee. Some coffees are predominantly sour, some particularly bitter, others are really earthy, or acidic, or just have some weird kind of funk to them. I then use that one characteristic to match against the other cups. If the next cup has it too, then they are likely to be the same, if the next cup doesn’t, then test the third, if the third has it, bingo. You can also try and use things like the heat profile of steam coming out of cups, and the colour of the brewed coffee if you need a little help. Though often it’s just more confusing.

So in a sense, you’re really not tasting coffee at all. You’re pulling out one flavour component that you can use to match against. Of course being a professional coffee taster, those flavour components are going to be a lot more apparent to someone who does it every day than to a weekend cupping warrior. But the concept is still the same. Of course the problem arises when the coffees all start to taste like each other, or when your mind starts to wander, and the taste you were matching against suddenly slips from your mind.

So how did I do ?
Well, not bad, but not good enough to take out the win this year. I was dead certain of the first set, which I pushed out after only one sip of each cup, and later found out I had it wrong. Which still confuses me as to how I could be so certain, but then these things happen. I managed to get 5 out of 8 sets right in a little over 4 minutes. Pipped by a stirling performance by non other than barista to the stars Ben Bicknell, who managed an outstanding 7 out of 8. A host of other competitors also came in with 5 out of 8 actually. So perhaps we’re all just talented :)

W.A Barista Competition – Winner

Just a quick update with some photos and to announce that Mark Chandler of the WA Barista Academy has taken out this years WA Barista Competition. Mark had an excellent routine and amongst a small but quality field came out on top to take the win.

Mark signature drink of a pear puree, blueberry reduction and espresso with beetroot dust on top was both tasty and well constructed, and his overall routine and technique were enough to put him over the line.

Great effort this year by all the baristas though, who despite the hurried time frame, came together to put in some fantastic performances.

I was lucky (?) enough to judge all 9 competitors over the course of the day, and despite being massively over caffeinated now, really enjoyed the day. Big thanks to Ben Bicknell for pulling it together, the rest of the judges, runners, helpers, and competitors, and current Australian barista champ (and runner up in the WBC) Dave Makin for swinging over to lend a hand with judging and keeping things in check.
