That&#039;s exactly what I mean. You literally open the meat up like a butterflies wings, which means you can then fill it all up with herbs and other flavours, and the meat should cook evenly all the way through, rather than having much thicker sections.

The term butterflying can be applied to just about anything... Steak, Prawns, Chicken breasts... anywhere you want to open something up to help it cook.
